A special, thirty-six month aged Comté from one of our absolute favorite affineurs, Rodolphe Le Meunier. This wheel was personally selected by us on a trip to France. We chose this wheel especially for its fruitiness (others were meatier.) It is dense and rich, with an abundance of tyrosine crystals. An intense flavor profile that is fruity and nutty.
